You can blanch potatoes with or without the skin. Start with unsalted boiling water and place the potatoes in the water for 4 to 5 minutes. Transfer to ice water for 4 to 5 minutes and then drain well. Blanching is normally done to freeze the potatoes. Make sure to place them in air tight containers before putting them in the freezer and then use directly from the freezer in your dishes.
